Garden salad

This is a summer salad with most of the ingredients fresh from the back garden!

Quinoa and bean summer salad

1/2 red onion
6 cherry tomatoes
2 small spring onions
1 cup uncooked quinoa
1 can chickpeas
1 handful dragon beans
1 handful snowpeas
Mixed lettuce and baby spinach

Bring 1 3/4 cups water to boil in a small saucepan. Add the quinoa simmer, covered, on low until soft (15-20mins). Chop salad ingredients into a large bowl. Once quinoa has cooled mix through salad ingredients. Dress lightly with oil and balsamic!

I used dragon beans and snow peas but substitute in any fresh crunchy beans available! Kidney beans are also a great alternative to chickpeas 🙂
