Roast veegtables are a delicious and easy way to ‘jazz up’any meal, like a simple steak. Last night I was feeling too tired to make a salad or go to the shops so whatever veggies were on hand got thrown in a baking dish with a little oil, dried rosemary, dried basil and salt and left in the oven at 180 C for about 1hr 15 minutes. Too easy!!
Those are golden zucchini from my garden. I have been trying to use zucchini in as many recipes as possible but would welcome any suggestions!
