What to do with a garden full of zucchini’s?!
Proscuitto zucchini logs
3 large zucchini
1 white onion
½ c wholemeal sr flour
½ c parmesan
3 eggs, whisked
¼ c parsley
1 tsp marjoram
1 tsp oregano
1. Coarsely grate the zucchini (I did this in the food processer). Place in a colander and squeeze out as much moisture as possible (I didn’t squeeze out enough). Place in a large bowl and stir in the flour, parmesan, onion, egg, parsley, oregano, marjoram and season with salt and pepper.
2. Lay out strips of prosciutto and place a ball of zucchini mixture in the middle. Roll prosciutto around zucchini.
3. Heat oil in a frypan on medium heat. Place rolled prosciutto in pan (as many as you can fit) and cook for 1-2 minutes on each side or until zucchini is cooked through. Transfer to a plate lined with paper towel and repeat for remaining rolls.
4. Any remaining zucchini mixture (or if you don’t want to wrap it in prosciutto) place 2 tablespoonful measures of zucchini mixture into the pan and flatten. Cook for 1-2 minutes on each side or until golden brown and cooked through. Serve with some tzatziki or yoghurt!
These would make great finger food for a party!
