Grandma’s mashed pumpkin

This is a long overdue post with the pumpkin mash we had with our roast rack of lamb a couple of weeks ago. I absolutely adore my Grandma’s pumpkin mash so I’d like to share the recipe.

Grandma’s pumpkin mash

Ingredients

  • 1 butternut pumpkin, sliced into cubes
  • oil
  • salt
  • 2 tbsp dukkah
  • 2 tbsp butter

1. Heat oven to 180 C. Coat pumpkin pieces in oil and sprinkle with salt. Place a little water in the bottom of the pan to prevent pumpkin crisping. Cook for 20-30 minutes depending on size of cubes, until soft.

2. Combine pumpkin, dukkah and butter in a bowl and mash until smooth. Season with salt as required.
