Corned beef

Last weekend I started the day with a trip to the farmers markets! So much fun – one of my favourite things but usually out of the question if we are training!


My loot 🙂

After buying everything in site that looked tasty I had to work out what to cook. First up was fish with potato wedges followed by corned beef and beetroot risotto.

Corned beef with beetroot risotto and variagated corn!


Corned beef



1 corned beef

1 onion studded with cloves

1 carrot, coarsly chopped

1/2 bunch celery, leafy ends only

2 bay leaves

2 cloves garlic

1 tsp peppercorns


1. Take beef out of plastic and rinse to remove brine. 20120319-154602.jpg


2. Place in pot of cold water and bring to the boil. Scoop ‘scum’ that forms off the top.20120319-154719.jpg


3. Add other ingredients and cook for 30mins per 500g or until a fork goes in.
