Choc macadamia snack balls

Wowee!! These little treats were so tasty that 3 batches (that’s right!) got devoured in a single day. The first batch was an experiment and so sucessful I immediately repeated it as a double batch ๐Ÿ™‚ I took the choc macadamia balls to the local cross country race on Saturday aftrenoon and the runners very much appreciated a post-race snack ๐Ÿ™‚ L loved them so much he couldn’t stop eating them (thus all gone). And the biggest bonus – they are healthy! Not a drop of unhealthy in them ๐Ÿ˜›

Choc macadamia balls

  • 1/4 cup macadamias
  • 1/8 cup almonds
  • 1 c dates
  • 2 tbsp cocoa

1. Process the macadamias and almonds in the food processor until chopped. Don’t grind them to a flour though! Remove from processor.

2. Process dates until smooth and sticky lumps begin to form. Add cocoa and nuts back to food processor. Pulse until combined.

3. Roll into tbsp sized balls and place on baking paper.

4. Store in fridge (if they last that long!)

They didn’t even last long enough for me to get a photo of the finished product!
